I made this last night. It is a favorite in my family, and has been so for many, many years.
I decided to post it because we enjoy it so much, I want others to enjoy it too!
sautee an onion, add a can of mushroom, then chopped brocolli .
then add water so that it can cook. WHen all the water is gone, add some bread crumbs, salt, onion, garlic, black pepper and mix.
flatten chicken cutlets, place a heaping spoonful of mixture inside, and roll up. you can secure the side with a toothpick, jusrt in case.
mix mayo with ketchup so that is has a nice orangey color. spread over the chicken.
cover and bake at 375 for around a half hour.
I serve it over delicious wild rice, which I bake in the oven.

sounds great! do u think I can make this on friday and serve it shabbos day??? or will the insides get to soggy?

Beauty and the Beast, thank you so much! I defrosted a pkg. of chicken cutlets and wanted to make something different with it tonight. This was very good!

Beauty-- or anyone who made this.. do u think I can make this on friday for shabbos day or will it get to soggy??

I made this for Shabbos dinner yesterday. It was delicious!! I didn't have a can of mushrooms in the house, but I did have a can of condensed mushroom soup. I added about half a can of water, and cooked it down per Beauty's instructions. Mmmm yum! Served it with a brown and wild rice pilaf with craisins, carmelized onions and toasted almonds. Thanks, Beauty!!
