I got this 'recipe' from a good friend and it always turns out delicious.
Basically, you shmear the whole top of the roast with apricot jam and sprinkle with garlic powder. You can slice onions in the bottom of the pan if you like and then add about 1 inch of water to pan, cover and bake at 350 for a few hours. You can tell it is cooked by pricking the roast with a knife, and if the liquid runs clear its done.
When its completely cool you slice it thinly and reheat in the gravy. Delicious!
Good Luck!

When do I take off the string before or after I cook it and could you be more specific on the time it cooks for?

cook with the strings ON ... put some olive oil, garlic powder, black pepper & paprika - rub it around - then bake at 350 for about 2 hours - but it depends on how big your roast is ...
you can make a nice cranberry relish to serve with it ...
sounds yum - enjoy!!!
