Rolled Flounder with Salmon or spinach filling

6 flounder fillets
1 15 oz can salmon( drain and remove bones)
2 eggs
1/3 cup bread crumbs or matza meal
salt, pepper,garlic powder to taste
1/2 cup tofutti sour cream
1 cup tomato sauce
1 medium onion, thinly sliced

Preheat oven to 350.

In baking pan, layer sliced onions. Mix salmon with eggs, bread crumbs and spices (will give spinach directions next)

Place about 2 T of filling at end of flounder fillet, roll up and secure with toothpick. Place in baking dish over onions, seam side down. Mix tomato sauce with sour cream. Pour over fish. Bake for 50 minutes

For spinach filling:
1 10 oz pack of frozen chopped, thawed and drained well
1 eggs
1/3 cups bread crumbs or matza meal
season to taste.

mix well and fill as above.

If you cant get tofutti sour cream this will prob. work well with a non dairy creamer.

Dont forget to remove toothpicks before eating, otherwise, ouch.

sounds interesting ... so ... do you know they now make canned salmon in tuna size without the bones ... What

you still get more salmon from a larger can even after removing bones. Some ppl like to eat the bones (my dh) cause its a good calcium source.

Its great with frozen, because you cant taste the difference once its cooked like this.

Hey, I made it today with the spinach filling. I added cornflake crumbs on top and made it dairy w/ reg sour cream. It was delicious and dh was very impressed! :-D
