Looking for something that will stay moist for friday night. I've done it in puff pastry with mushroom sauce, but want something different.

I made Beauty and the Beast's candy chicken last week and it stayed very moist in the oven until I served it.

coat chicken cutlets with mayo and breadcrumbs mixed with little spice
bake covered 20 minutes and 10 minutes uncovered
combine equal parts ketchup,mayo, water. pour in some sesame needs and garlic powder and boil on stove. pour over chicken cutlets.
or,
in the KBD Passover by Design there is a recipe for chicken with french dressing and cans of whole berry cranberry. It was excellent and it worked Great on chicken cutlets!I
dont have the cookbook on me.
Does anyone have it and care to post?

I find the only way to keep chicken cutlets moist is to broil them for only a few minutes, and I do not reheat them I serve them room temp.
