I bought thin veal cutlets today, any good recipes that don't involve breadcrumbs or frying?

I find the less you do to veal the better it is....
the cutlets usually are less salty, w/ shoulder is saltier. I think scalopini=w/ shoulder rite? so I usually just sprinkle w/ some minced garlic, fresh parsley, steak seasoning, and pepper, and throw it on the grill (or put it in pan in the oven) either way it comes out YUM.

OMG!! I have such an amazing recipe- but it does inolve frying, but its sooooo worth it

agh- coat the flour in seasoned flour, and brown lightly on each side. the sauce-I have to get u exact ingredients- is mushrooms, white wine, grlic, spices its yummmmm and then you pour the hot sauce over the browned cutlets and bake for like 3 hours

mom7270 - does it come out really tender when you bake it? Last time I made it , I also sauteed it first, then cooked it in the sauce for a while, but it was so tough and chewy. I assume you cover it, right?
