I decided to make this and it's delicious! Thank you!
Just one disappointment.. it came out cake-like as opposed to a kugel. I think I'm going to have to make my mini pumpkin pies now, too.
I would definitely make it again, but as a cake.[/list]

I'm still feeling kind of sick, so I was thrilled that my husband made plans to go to a shul supper with our older kid. Plans changed and I have to make dinner, so I'm keeping it simple. I'd promised my kid breakfast for dinner, so this is the plan:
Blueberry pancakes or plain pancakes with blueberry sauce
Goldilocks (scrambled eggs with lox and cream cheese, cooked the Silver Palate way)
Salad with orange segments and some kind of dressing, maybe honey mustard
Not sure about dessert. Something easy. Either chocolate mousse or chocolate pudding.

If I can't get the kind I want at the Shuk tonite, I'm ble neder going toake my own. No way do I want to buy two larges and spend $7, then throw most of it away after Shabbos....

sure cbmom! I found it online and DH and our 'regulars' really enjoy it. kids gobbled it too.
Preheat oven to 325.
Mix all these in one bowl:
3 eggs, 1 cup oil, 2 cups sugar, 2 cups hand-grated zucchini (grates very easily), and 2 tsp vanilla.
In another bowl:
3 cups sifted flour, 3 tsp cinnamon, 1 tsp baking soda, 1/4 tsp of baking powder, 1/4 tsp salt.
Combine into one bowl and put into greased and lightly floured pan. Bake at 325 for 60-70 minutes or until done. (I think mine always bakes less)
I always use a 9 x 13.

yes by hand, and I use a 9 x 13.
the recipe jumped out at me from the online search. it's under our favorites now.
