Make an SCD cholent. Soak kidney beans, navy beans and lentils for 15 hours. Rinse and drain. Place into crockpot. Add diced onion, minced garlic and chunks of carrot, coarse salt, water. Peel and cut off the neck of a large butternut squash (shaped like kishke roll) and put that on top along with a really chunk of meat.

What kind of meat would you suggest?

Does soaking help? Beans and lentils are really bad for my relative’s colitis

The softer the meat the better... Cheek...
I soak for ten hours and then cook it in water for 1 hour. Then I use it for cholent

It helps and is necessary. BUT. It's only used once you've reached a certain point in the healing process. So if it hurts your relative's colitis, DON'T make such a cholent.

My mother used to put potatoes into the cholent for my brother with crohns. He couldn't eat any type of beans when his crohns was bad.
I think she also cut down on the spices, which was a huge trigger for him.
Sorry, can't remember what meat she used or any other details...

Good grade of meat
Salt
Pepper
Garlic powder
Paprika
Potatoes
Drizzle of honey

If OP's relative is on SCD, potatoes are out.
I'd skip the beans too.

Rorie has a grain and bean free cholent made with butternut squash, sweet potato, cauliflower, meat, onions. Or just do a meat stew with whatever vegetables your relative can have. I love flanken and carrots with tons of garlic.

Nice. Sweet potatoes are off limits for SCD though.

Scd cannot have yams. Barley or potatoes. Just soaked navy beans cooked and butternut. You can add carrots too.

We're assuming the guest is SCD.

I have moderate colitis and do not follow SCD. But unlike the OP's guest, I can eat beans/lentils.

And I know someone with IBD who found rice so soothing that he got a heter to eat it on Pesach. (Extenuating circumstances.)
It's not that these foods are poison to someone with IBD. But if they're going on SCD it won't work without strict adherence

Same with my son. He has Crohns and can eat whatever he wants though sugar is discouraged. I wanted to add this so people understand everyone's IBD is different.
