So it’s dh.
He’s not on SCD because it’s too hard for him. I stopped making cholent but I kinda miss it and would like to try again…
Whenever he eats cholent his stomach really gets messed up but I’m not exactly sure what the culprit is- beans or potatoes (or the way it’s cooked?). I’ve tried barley only but it still bothers him…
(I know I can make regular cholent for myself but when it’s there he’s tempted so I don’t want to make things difficult for him.)

Yep. He wouldn't even consider the SCD diet. But he does take Gluterase and UltraInflamx supplements.

I just made mine in a mini crockpot
It’s based on Rories recipe
A little oil then add riced cauliflower
Sauté onion add on top
Then add meat and I also like to add chicken too comes out really soft
And cubed kabocha squash it had more starchy texture than butternut
A lot of spices and water to cover

I used to use short grain brown rice. Which is not SCD but at least GF.
I've tried sweet potatoes, carrots, squashes. Chicken or pareve. GF kishke. Potato kugel on top of my tzimmes.

Bottom line (no pun intended : ) the longer you cook something the more enzymes are depleted (raw food being far richer than enzymes than cooked). So unless you're supplementing with digestive enzymes (and even then) cholent is essentially an undigestible food. For s/o w digestive challenges, it should really be off limits.

Nowadays I'm yotzei hot food on Shabbos with tea or cocoa. Zehu. Many many weeks I have yogurt or salmon for my Shabbos day seudah.

I almost never eat meat. It's very acidic & hard to digest.

My dh has Crohn's and is on scd but we all eat more gut friendly foods since he's been on the diet.
Cholent is not a gut friendly food. I do make scd cholent with meat, butternut squash, navy beans and lentils which were soaked overnight. My dh is fine with it. But what someone else said about enzymes is true. Maybe if he would take digestive enzymes it would help. Also, if you replace the potatoes with butternut squash or kabocha squash And the barley with short grain brown rice, it would probably be a lot better.
