I never had an issue with meatballs falling apart. I think because there's bread in it....that's what holds it together. I have a really yummy recipe from a magazine from a while ago....

Similar here!
Grilled cheese sandwiches and tuna on the side for the kids (they don't like tuna hot), plus sliced apples, pears and cucumbers (most of them are not big on veggies so I serve fruit more often). Salmon, salad and split pea soup (leftovers from earlier in the week) for adults.

One pan meal.
1 cup brown rice
1.5 cups water
Combination of veggies cut into small chunks, I used onions and zucchini
Dark chicken cutlets
Seasoning
Pour rice and water into 9x13 pan. Sprinkle veggies on top. Cover with chicken cutlets. Generously season chicken.
Bake covered on 400 for an hour. Uncover and bake for a few minutes to brown. I prepped this the night before and put in the oven at 4 pm.

I usually make a dairy soup on thursdays but I’m too tired to chop up veggies for my usuals… any ideas for an easy minimal chop soup?

Lentil soup is a good one that requires little chopping.

Tigerwife-
Zucchini & potatoes. Throw chunks into pot with water, salt & pepper. Blend with hand blender when soft.
If u want you can start off with little oil & onions and let it sauté a bit.
You can really be flexible with veggies- add frozen broccoli or California mix. And if you’re watching carbs omit the potatoes.

We call this happy family!
Except that I put the chicken on bottom, veg on top, pour sauce. Don't mix, bake 30 min covered, 30 uncovered. Mix before serving. The veggies remain more crunchy that way. (Broc, corn in addition to the ones mentioned above)

We are having tilapia with cherry tomatoes lemon and cumin, sesame green beans and black rice. For dessert probably hot cocoa.

Spread garlic mayo on flat bread
top with lettuce/kale/spinach, mushrooms, onion, tomato
Add cubed pastrami and turkey breast
drizzle with some more garlic mayo
Bake on 350 for 20 min.
Before serving drizzle some spicy mayo.
Its DELISH!!
