1 cup soy sauce
1/3 cup brown sugar
2-3 tsp tahini
juice from 1 can pineapple chunks (reserve chunks)
1/4 cup sesame seeds (optional)
red pepper flakes to taste (optional)
Pour ingredients into ziplok bag (except chunks) with salmon. I either buy the frozen fillet sections (thaw first) or cut a larger piece into sections about 3" across. Marinate for an hour if you have the time, if not its still good.
Bake covered at 400 until done, about 15-20 minutes or so. Drain liquid from pan into saucepan along with any marinade left from the bag and reserved pinapple chunks. Simmer over med until sauce thickens, then pour over salmon when you plate. You can also use the pineapple chunks in rice, just add before you close the lid to cook, and serve with the fish.
For a great shabbos variation, I baste the cooked fish with apricot preserves and top with chopped macadamia nuts, broil for 2-3 minutes until the nuts are golden. Very good served hot or room temp for lunch.
Hope you like it!
