What can I do with canned pumpkin? I bought a few large cans for some reason at Costco, and I know I can't freeze pumpkin pie. ...Is there something I can make that is freezeable? Thanks!

Any type of pumpkin bread or cookies will freeze well, and they'll be moist when you defrost them.

This is our current favorite:

ETA: I usually make a few of these at a time. I freeze them raw in graham cracker crusts, and I put the crumbs in a snack-sized ziplock alongside the pan in the freezer. When I want pumpkin pie for Shabbos or Y"T, I simply uncover and pop into the oven, and midway thru the baking when it's firm, I spread on the crumbs, and then finish the baking. Tastes completely fresh.

I freeze pumpkin pie why not?
Also there is a soup in kosher by design short on time I used to make a lot called pumpkin bisque

I saw a recipe on allrecipes.com
It said to make muffins using a box of spice cake mix plus canned pumpkin - nothing else.

I've done this, and tossed in a handful of coarsely chopped toasted pecans. It was amazing.
"Cake mix + anything" is one of my specialties. I have thousands of variations.

I make a really good pareve pumpkin lasagna with canned pumpkin (assuming it's the unsweetened kind, and not canned pumpkin pie filling). Can of pumpkin + 1 cup or so of cashew creme (can make in a blender) + a tablespoon or two of miso + sage + nutmeg + 1-2 T olive oil + salt and pepper to taste. Blend away, layer with lasagna noodles and maybe some sauteed veggies, and bake.
You could also use it as a sauce for pizza.

Soups.
Epicurious has one, I think with split peas.
So does Elizabeth Kurtz in Celebrate.
And KBD Entertains pumpkin doodles!
You can freeze the pumpkin, say half a cup per bag, and defrost as needed; I made great cookies recently with thawed canned pumpkin.
