I made this awhile ago but am just posting a few recipes that turned out well this morning as a way to avoid other responsibilities LOL

I know pumpkin is more traditional Fall but I love pumpkin bread a lot and this was a very good version of it. Like a quick breads, easy to make

This makes two loaves which is great because it freezes well.

And pumpkin is a vegetable so why not for breakfast instead of toast? LOL LOL

Skip the line! Make Starbucks pumpkin bread in your own kitchen and let the aroma fill your home as it bakes. This copycat recipe is a definite keeper!
—Taste of Home Test Kitchen

PREP: 25 MIN. • BAKE: 1 HOUR + COOLING • MAKES: 2 LOAVES (16 SLICES EACH)

1 can (15 oz.) solid-pack pumpkin
4 large eggs
¾ cup canola oil
⅔ cup water
2 cups sugar
1 cup honey
1 ½ tsp. vanilla extract
3 ½ cups all-purpose flour
2 tsp. baking soda
1 ½ tsp. salt
1 ½ tsp. ground cinnamon
1 tsp. ground nutmeg
½ tsp. ground cloves
½ tsp. ground ginger
½ cup salted pumpkin seeds or pepitas

1. Preheat oven to 350°. In a large bowl, beat pumpkin, eggs, oil, water, sugar, honey and vanilla until well blended. In another bowl, whisk flour, baking soda, salt and spices; gradually beat into pumpkin mixture.

2. Transfer to 2 greased 9x5-in. loaf pans. Sprinkle tops with pumpkin seeds.

3. Bake 60-70 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

HAVE IT YOUR WAY.

Numerous mix-ins work well with pumpkin bread. We recommend adding chocolate chips or nuts and fruit”
