I’m in old life, before I was frum, I made Cioppino. Obviously I can’t use shellfish—so I know I can use several kinds of white fish—but where I’m stuck is the lack of a flavor like “clam sauce.” What are my kosher options for flavoring a fish stew, tomato base, and can I buy them at Whole Foods?

Any broth or vegetable stock works. Use one with great flavor or flavor it yourself.

I tried veggie bouillon but it wasn’t fishy enough. Fish stock?

You can for sure make fish stock. With a mirepoix, bones, bay leaves, some dry white wine, salt and seasonings.
What is the flavor missing? Is there an umami element?

I don't know what clam sauce tastes like but what about fish sauce? Is that at all similar? Red Boat brand does a kosher run (or did -it's been a while since I bought any).

I thought fish sauce was a condiment? Clam sauce, iirc, was broth-like.

It is a condiment but also used in sauces, marinades, etc. and I used to add a few drops to my miso/ vegetable soups. Just something to try to add fishy flavor. Maybe.
