Pargiyot Recipe

I finally found some pargiyot yesterday (they're an extremely rare find where I live) and need an easy recipe for Friday night.

I whip up a honey mustard marinade and let it marinate overnight.

I do usually ¼ cup whole grain mustard with ¼ cup Dijon mustard, but you can just do 1/2 c either one
1/3 cup honey
2 tablespoons olive oil
1-2 tbsp lemon juice to taste
3 cloves garlic, minced
½ teaspoon paprika
Salt and black pepper to taste
½ teaspoon dried herb such as rosemary, thyme, or parsley
Usually I sprinkle in some brown sugar, I find it helps with the texture

Then broil. In my oven its about 7 min per side but broilers vary...

So good!

I made it tonight and it came out delicious!
My picky kids loved it!

I have some family members who will only eat chicken breast (and of course others who prefer the pargiyot Rolling Eyes ). Do you think this will work well for chicken breast too?

I find that my marinades work equally well for baby chicken and chicken breast, but the grill/broil time for chicken breast should be reduced, as it dries out more quickly.

When I grill chicken breast, I watch it and flip it pretty quickly....It's literally done in a few minutes.

Thank you so much MLC for this recipe! Finally got to it yesterday, made it with chicken legs. I baked it covered on 375 for a bit over 2 hours, with some potatoes in the pan as well. The whole family loved it (and we're not huge on mustard!).

That sounds so good- Never thought to prepare that way! Now I plan to try that this week Smile
