I have a whole bunch of salmon tail fillets in my freezer . I usually buy a side of salmon at a time and never use the tails , because I find they have more fishy taste.
Does anyone have a good recipe where I could use these tails ? It’s a shame for it to go to waste.
Any ideas welcome. Thanks!

You can bake them & then add mayo to make salmon salad. Just like tuna salad. Delicious.

BTW, I also frequently buy sides of salmon and I bake or broil the tails along with the rest of it. I never noticed a difference in taste. Maybe you can try some kind of sauce like teriyaki sauce if the taste is not to your liking.

Do you need a special grinder for that? Or would a food processor work?

Just make them like you would do any salmon. The pieces just aren't as fancy.
My current favorite is to drizzle with lemon juice, smear with mustard, and then sprinkle generously with everything topping till covered. Bake at 450F for about 15 minutes.
ETA I like to take the skins off with a sharp knife. Makes it less "fishy".

Just a regular food processor. Grind some purple onion, fresh spinach or parsley as well. Add eggs, bread crumbs, spices and fry or bake.
