I would like to make a fancy (but not too complicated) simanim dessert for Rosh Hashana (and would love to somehow incorporate chocolate!!) I would appreciate any ideas!!

I've been trying to access the pomegranate ice cream recipe for a while now, but I can't get through to the main site for some reason.
Do you mind posting the recipe please?

For pom ice cream I see if you click on Rosh Hashana on right side, you can view ingredients but not see instructions
Pom juice, lemon juice, confectioners sugar, whip.

Pomegranate ice cream from culinary kosher

Ingredients
3/4 cup pomegranate juice
1 tablespoon lemon juice
1 1/2 cups confectioners sugar
2 cups heavy cream (Rich's Whip)
Preparation
In a mixing bowl mix the lemon juice with the pomegranate juice. Add the confectioners sugar and whisk to dissolve. Add in the Rich's Whip and mix until soft peaks form. Freeze for at least 4 hours. Serve with pomegranate aerials on top for decoration

do you whip up the rich's whip separately and then fold into the pomegranate juice mixture or you pour the whip into the juice mixture before it is whipped up?

You pour the Richs whip (not whipped) into the pomegranate mixture and then you whip it.

Can one substitute Rich's whip with coconut cream?

I am really not sure. I do not have experience with coconut cream. If you have substituted it before and found that it worked then I guess you could try it here also. Let me know how it comes out!

I didn’t use spring, I used Pom. But I may try spring juice this year as it’s much cheaper I think.
