Tonight is teriyaki tofu/chicken stir fry with peas and greenbeans and udon noodles. DH is the only one that wont eat tofu so I serve both on those nights
Tomorrow is eggrolls filled with leftover rice/cabbage and chicken from shabbos
Wednesday is two ingredient meatballs, greenbeans and kasha
Thursday is pasta with peas, roasted cauliflower, capers and lemon
Gnocchi
2 potatoes
1 cup flour
1 egg
dash of salt
2-3 Tbsps. oil (add to water)
Cook potatoes until soft, and then cool. (If potatoes are hot, dough will be too soft.) Drain and mash potatoes and mix with rest of ingredients. (Add more flour if dough is sticky)
Divide dough in three parts. Roll out each part to a long strip. Cut strips into small bits. Fill a large pot with water, add oil, and bring to a boil.
Drop bits of dough into water and cook until gnocchi float to surface. Remove from water and drain with a sieve.

Tuna fajita
2 cans or pouches (5 oz) Tuna, drained and flaked
1/2 medium red bell pepper, julienned slices
1/2 medium green bell pepper, julienned slices
1/2 medium white onion, julienned half rings
1 tablespoons salad oil
1 tablespoon lemon juice
1 tablespoon lime juice
1 tablespoon taco seasoning
4 flour tortillas
In skillet, sautee bell pepper and onion in oil until tender. Add tuna, lemon juice, lime juice and taco seasoning. Gently stir mixture over medium heat for 5-10 minutes to heat through. Serve with flour tortillas. Serving suggestion with salsa, guacamole, sour cream if desired. Makes 4.
I don’t have a recipe and that was the first time I made it. I happened to have used leftover meat from kibbe and added more with sauteed onions and garlic and added salt and pepper with chopped zucchini. Might have done more vegetables, but there was so much meat. You can do anything that would taste good with chopped meat. I forgot, I also put some tomato paste in.
Monday lunch- make your own salad
Monday supper- meatloaf (from the freezer shh), sweet potato fries, zucchini leek soup, roasted cauliflower
Tuesday lunch- blintzes, salad, watercress soup
Tuesday supper- khoresh beef with celery (never made it before), rice, salad
Wednesday lunch- vegetarian chili, french bread
Wednesday supper- savory chicken, marinated eggplant, shlishkes (also in the freezer, but gotta cook)
Thursday lunch- carrot and zucchini quinoa, pasta, salad
Thursday supper- hot dogs, burgers, sautéed onions, potato salad, I have to think of more toppings
My kitchen during the week is simple. What we ate tonight: pasta, cucumber and fish sticks. Where do you ladies ger the time for these gourmet dishes lol?
