My supper
I bought chicken fingers and dipped it into a mixture of ketchup and mayo, took a wrap first I put the chicken, then fried onions, then a slice of pastrami, then I closed the wrap and baked on 375 for 45 min.
It was scrumptious
I also made a toss salad w sauteed pastrami and sauteed onions
3 medium white potatoes, scrubbed
1 onion, diced
1/2 cup shredded cheese (I doubled that)
Salt and Pepper to taste
6 eggs
Preheat oven to 375*F. Prick the potatoes with a fork.
Bake the potatoes for 40-45 minutes, or until fork-tender.
Meanwhile, heat oil in a large frying pan over a medium-low flame. Add the onions and saute until lightly golden. Remove from heat.
Cut the baked potatoes in half. Scoop out the insides, leaving a bit around the edges to prevent the peels from tearing.
Mash the potatoes well, then mix with the sauteed onions and shredded cheese. Add salt and pepper to taste. Scoop the mixture back into the potato halves.
Using a spoon, make an indentation in each of the potato halves.
Place the potatoes in a baking pan (A large-deep disposable pan worked for me). Pour an egg into each indentation and season with salt and pepper. Cover the pan with foil.
Bake at 375*F for 5 minutes. Uncover and bake for an additional 5 minutes, or until the egg whites are set (it took the eggs twice as long, but it could be my oven...).
Sprinkle with additional shredded cheese before serving.
Yields: 6 servings (It yielded 2 servings for us, because 1/2 a potato would not be filling enough).
Note: One egg is often too much for each potato half. To avoid the overflowing, separate the egg and pour just a bit of egg white into the potato, then add the yolk (We didn't mind the overflowing).
