Last night was sauteed sausages and peppers/onions tossed with angel hair and salad.
Tonight is salmon with roasted cubes of potato/sweet potato. And salad, of course.

Tonight, I'm doing Italian dressing, but anything goes. Soy sauce/garlic/sesame, ketchup, honey mustard, bbq sauce, everything bagel spice, whatever you are in the mood of.
The potatoes roast faster if they've been boiled slightly before. So I'll season them with garlic, paprika, s&p and roast at 500 or broil. After about 20-30 minutes, add the salmon and broil for about 15 minutes.
Easiest sheet pan dinner.

Don’t have a real recipe but 2 lbs ground white chicken, 2-3 eggs, flavored bread crumbs, 15 oz can of tomato paste and a squirt of ketchup.
Make the balls and make a sauce of classic pasta sauce with brown sugar and ketchup and pour over and bake for about 1.5 hours

Last night was vegetable lentil soup, chicken patties, roasted cauliflower and sugar snap peas with pearl onions.

Tonight was squash- cauliflower soup, tomato basil salmon, spinach and cheese blintzes.

Mix some mayo with fresh garlic and basil (fresh, frozen or dried), and salt. Spread over fish and top with sliced cherry tomatoes. Bake uncovered for approx half hour. enjoy!
