I have 3 terribly fussy teenagers and it's a real chore finding something that they all enjoy, let alone eat.
I thought you might be interested in this - especially for those of you who have fussy kids like me!
I took some chicken strips and marinaded them in garlic, cumin, paprika, salt & freshly ground black pepper and a little teriyaki sauce.
I then coated them in some crushed cornflakes and fried them in a little olive oil.
My kids devoured them and told me they were delicious - all three of them said the same - that must be some kind of a record in my house!

you didn't mix the cornflakes with a little egg to make them stick?

You don't even have to fry them. . . corn flake crumbs do very well in the oven.

I 'fry' them in the oven. Drizzle some oil over shnitzel in pan,and it will get crunchy in the oil. You don't need a lot of oil.

No, it didn't need it as the chicken had been marinaded and the sauce was enough for the cornflakes to stick to.

I didn't deep fry them, I just put enough oil to cover the base of the frying pan and it was olive oil. The ones I did for me I did in the oven and they were too dry. I think they would have been too dry for the kids. DH had some of both the fried and the oven-baked ones and definitely said that the fried ones were better.

I basically had some left in the cornflake packet and I just twisted the top of the packet and crushed what was inside with my hands. Some bits were finer than others - some were even still whole - I think that's what the kids liked about it!
