Any kind. Not from a mix. Idiot-proof, not requiring very specialized ingredients and not very sweet (the less sugar the better, but no fake stuff). Ideas? I know it's erev YT but hoping.....

I don't have any 'quick' ones off hand, but as I wait for my mint-chocolate cakes to bake, I suggest that you look at the other threads on the same subject. Some even have a one-bowl or one-pan cake recipe.
I'll look for you right now.

One-Bowl Chocolate Cake
Beat together until blended:
2 cups flour
2 cups sugar
2/3 cups cocoa
3/4 cups shortening
3/4 cups liquid (coffee)
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
pinch salt
Then add:
3 eggs
1/2 cup liquid (parve milk)
Beat until blended (do not overbeat). Pour into greased and floured 10" tube pan or 9x13" rectangular pan. Bake at 350 F for about 1 hour - less for 9x13.[b]

Hershey's 'Perfectly Chocolate' Chocolate Cake
2 cups sugar
1-3/4 cups flour
3/4 cup cocoa
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup Parve milk (soy milk, rice milk, almond milk... non-dairy creamer works too)
1/2 cup oil
2 tsp vanilla extract
1 cup boiling water
Preheat oven to 350°F.
Whisk together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla and continue mixing. Stir in boiling water (batter will be thin) and continue mixing until smooth. Pour batter into 2 greased and floured 9" round pans.
Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean.

Pound Cake - lamplighter
2 cups flour
2 cups sugar
1 cup oil
6 eggs
2 tsp vanilla extract
1 tsp baking powder
Preheat oven to 350°F.
Whisk together sugar eggs and sugar. Add oil and vanilla and keep mixing. Stir in baking powder and flour and mix until smooth.
Pour into a greased and floured 9x13 pan bake for 45 minutes or until wooden pick inserted in center comes out clean.

Google search one pan mix cakes
The only thing to wash is the soon/spatula since you mix it in the baking pan
I make the Pesach blondies from between carpools and use sugar substitute to make a low carb version
Super easy.

If you have an easy favorite cookie recipe, many can be turned into bars/blondies by spreading the batter over a cookie sheet (or different size pan, depending on recipe size). They should be about 3/4” when flattened raw.
Baking time is approximately 2.5 times the amount of time the cookies would bake (at 350).
