I was looking at old posts here for how to cook a fish head and saw someone had mentioned not to do salmon heads because of possible parasites infestation. Is that a specific worry for the head or any part of the salmon? (We eat salmon, just wondering if I have to be especially concerned about the head).
Also... I only really saw recipes for boiled fish head- any suggestions on a way to bake in oven with very little added (non preferably) oil?
Do I have to do anything specific to it before baking (like cutting anything off or whatever)?

Just wash well, pat dry, and rub with a mixture of crushed garlic and salt. Bake uncovered.
Don't worry about things like parasites.
