I'm Yemenite, let me tell you how I make it:
If you can, get "hawayij" its the Yemenite spice- that is the best way to go! It can be used on many things, chicken, meatballs, sauces...If not, follow the recipe the above poster mentioned.
Boil big pot of water
Add chicken pieces (we add chicken pieces that we eat, legs, thighs..)
Take a spoon and remove the ichy stuff that foams up.
Add the veggies that u want, we like potatoes, carrots, onions, zuchinni..
Once boiling add 1 generous spoonful of hawaidj and 1 tablespoon of salt.
And that's it!!

My dh is Temani. If I added carrots or zucchini to the marak, he'd take me to beit din.
"amother's" recipe is basicaly the same as ours. You can also make it with beef (neck or shoulder). However we add cilantro and parsley. my dh prefers it as a garni tied, I like it chopped up. Add potatoe (whole or half) at the end of cooking so they don't turn to mush.
If you can't get the hawayi in your local store, I have seen it online.
But you can make your own:
2 Tblsp black pepper
2 Tblsp ground cumin
1/2 teasp ground corriander
1 teasp tumeric (I like more however)
4 cloves ground (I sometimes add a couple whole cloves to the soup)
4 shelled cardamon seed pods
2 or 3 bay leaves
grind everything together
Eating marak temani with hilbeh & zhug is d'rigueur. I'll post that later, if you really need it right away PM me.
