stuffed peppers are easy

combine ground beef with anything you normally use for meatballs and some cooked rice. cut off tops of peppers, hollow them out, and stuff. you can either boil them in tomato juice/sauce or cover them with the tomato juice/sauce and bake.

oh, and for those interested, you can also put the stuffed peppers in a crock pot for about 8 hours on low. good for shabbos day if you start them friday morning and set the crock pot on warm right before shabbos. I prefer to use tomato juice for the crockpot.

I like to cut them into strips and roast them, then toss with a little olive oil, balsamic vinegar, sea salt and toasted pine nuts. Roasting a little fresh garlic to mix with it is great too. Delicious cold or warm.

I don't like anything spicey and that's what the soup recipe was. it was too bland without the pepper.

I recommmend you google red pepper soup and see what is you liking.

Can I have the recipe to make this in the crockpot for shabbos day? Also, my crockpot only has high and low, not warm. Will my peppers disintegrate?
