Thursday nights I don't really cook because I'm busy with Shabbos. Either we have milchig leftovers, pasta with jarred sauce and cut up veggies, pre-breaded fish I just need to bake plus corn, or scrambled eggs with toast and cut up veggies.

Tonight I don't have quite enough leftovers so I'm supplementing with some Dr. Praeger veggie burgers that were on sale.

@raizyscookin: A delicious heartwarming bowl of soup. ๐Ÿต This is so easy. POTATOE SQUASH SOUP Ingredients: 4 large green squash, peeled 6 yellow potatoes, cubed 1 bag carrots (about 9 small ones), cut in rings... Chicken soup/stock, ๐ŸŽผ "The more the merrier" ๐ŸŽถ 1 Tbsp. onion soup mix (optional) Salt & Freshly ground black Pepper . Directions: In a large pot add the cubed potatoes and carrots. On top the 4 pieces of sqaush. Pour over chicken soup then remaining water to be even with top of vegetables. Add onion soup mix, salt and pepper. Bring to a boil, cook on med-low for about an hour min. Remove and transfer squash into a separate bowl. Blend squash with an immersion blender. Pour the pureed squasgcback into soup pot . mix.

There is a fantastic zucchini soup recipe posted here thats fantastic and healthy.
