I'm looking for a recipe for an apple crisp that I can serve warm on Friday night with ice cream...BUT, it seems that most recipes call for margarine. Anyone have a recipe that uses oil?

Laurel's Kitchen has a recipe with oil, not marg. Or you can use "Earth Balance" margarine which is non-hydrogenated and has no transfat and is actually good for you. I use the "natural buttery" one in most of my baking - it's parve.

use less oil ... it will be hard to make it crumble as good ... or use crisco

I make it with oil (canola oil), and it comes out just as good.

I also use oil (much less than the amount of margarine called for in the recipe) and it comes out okay. Not as crisp/crunchy as margarine but definitely edible.

Here you go. From Laurel's Kitchen:
Diane's Apple Crisp
8 apples (she suggests green pippins)
juice of 1 lemon
1 t. cinnamon
2 T. whole wheat flour
3/4 c. raisins
water or apple juice
Topping
1 c. rolled oats
1/3 c. toasted wheat germ
1/2 c. whole wheat flour
1/2 t. salt
2 t. cinnamon
1/2 c. brown sugar
1/2 c. butter or oil (this recipe is written this way and I make it with oil)
Slice apples until you have enough to fill a greased 9x13 pan. In a bowl, mix the apples with lemon juice, cinnamon, flour and raisins. Return them to the baking dish, adding enough water or apple juice to cover the bottom. Mix topping in a bowl and press onto top of apples. Bake at 375 for 25 minutes or until apples are soft.

Thanks so much, chavamom....do you think the recipe you posted would be good as a dessert with ice cream?
Earth Balance looks like a great product, but I don't think I've seen it sold in the stores around here. I could be wrong though, so I'll definitely look out for it. Anyone know where I can buy Earth Balance in Flatbush?
Mishie, if you have the time, would you mind posting your recipe? Thanks a lot.

It's great with ice cream.
As for the Earth Balance - do you have a Trader Joes in the area? That's the cheapest place I've found to get it. Otherwise, it's available at most health food stores.

Here are some great tips for substituting margarine or butter in baking recipes; I used them successfully (I.e. swapping margarine for apple sauce + oil, or mashed bananas...)

Doesn't that make the bottom rather soggy and harder to cut neatly?

I think you have to do that b/c the recipe calls for less sugar than most? But no, most of it evaporates and the bottom is not soggy.
