Pineapple teriyaki chicken breasts because someone gave us a pineapple for Purim; stir-fried broccoli, shitake mushrooms, and eggplant; brown Jasmine rice.
Orzo, leftover french fries, meat stew (if they don't notice it's leftovers from Purim...I tried to disguise it as best I can!), and Mexican turkey salad.
Zucchini soup from the freezer
Baked sesame chicken nuggets
Bowtie pasta with toasted crumbs
Brown rice pasta for kids (they like it better!)
The kids all ate supper today! One didn't like the chicken so she had chickpeas instead...
Oh and a candy from their mishloach manos for dessert, obvs.
Don't tell anyone.... we started off with popcorn. Both of us got home tired and in the mood. Then we had curried lentil soup, omelettes, raw veggies and chumus. For "dessert" we had yogurt and fruit. It was actually delicious, despite the unconventional starter.
Pizza4:
Do you mind posting recipe for baked nuggets?
And, how do you get brown rice pasta to be child-friendly? Do tell!
Sesame chicken nuggets
Cut cutlets into bite size pieces and place in bag with ½cup flour. Shake to coat.
Sauce:
1 cup brown sugar (or coconut sugar)
2 Tbsp oil
2 Tbsp vinegar
1 Tbsp mustard (I use 1 tsp)
5 Tbsp ketchup
Combine sauce ingredients, dip nuggets and spread on lined cookie sheet. Sprinkle with sesame seeds. Bake 350 for about 30 min.
*about the pasta... I'm not sure why they like it lol. I started using it a couple years ago and would switch off with that and regular pasta. The best brown rice pasta is the spiral shape. I buy Goldbaums. You need to follow the instructions exactly. I melt mozzarella cheese in and put tomato sauce or ketchup. Honestly I also prefer it once I got used to the taste... it doesn't leave me feeling gross like after regular pasta!
*my kids don't know that it's a healthy pasta.
3/4 package whole wheat or regular spaghetti - cooked.
1 lb package chicken cutlets – cut into pieces
Sauce: (I usually double the sauce because I add a lot of vegetables)
1/3 cup oil
1/3 cup soy sauce
1 1/2 tsp. garlic powder
pepper
2 tsp chicken soup mix
1 tsp sugar
Vegetables (Choose whatever you like from this list. I do whatever I have in my house.):
mushrooms
baby corn
1-2 peppers cut into large wedges or diced large
1 onion cut into large wedges or diced large
2 zucchinis sliced
carrots cut into sticks
celery cut into sticks
(or substitute with any other stir fry veggies)
Mix pre-cooked spaghetti, raw chicken and raw vegetables in a 9x13 (or larger) pan.
Pour sauce on top, mix.
Cover tightly and bake for 1.5-2 hours at 375
I made this tonight and it was a hit! Everyone ate it! I think I may bake for less time or use dark cutlets next time, the chicken was a little dry. I doubled the sauce and used about 3/4 of it for lots of veggies. Thanks!
Tonight was leftovers from the freezer! Stuffed cabbage from succos , Chicken from purim!
With rice and string beans. OH, and leftover chicken soup from Shabbos!
