Dh found this recipe and it was SO GOOD. Even the 2 y.o. ate it (without the taco shell, of course!). I found it made more than 1 pkg of taco shells worth though.

I love authentic Mexican food, but the nearest place to get authetnic Mexican food is an hour away, so sometimes I need to improvise. Here is a favorite of mine that is a healthy way to get my "fix."

Ingredients
# 1 1/4 lb. boneless, skinless chicken thighs
# 1 envelope taco seasoning mix
# 1 tbsp. packed brown sugar
# 1 can (4.5 oz) chopped green chiles
# 1 cup frozen corn, thawed
# 1 can (10 oz) enchilada sauce
# 4 medium green onions, sliced
# 1 package (4.6 oz) taco shells, warmed if desired
# 3 cups shredded lettuce
# 1 medium tomato, chopped

Directions
1. Spray 3- to 4-quart slow cooker with cooking spray. Place chicken thighs in cooker. Sprinkle with taco seasoning mix and brown sugar. Toss to coat. Mix in green chiles, corn, and 1/2 cup of enchilada sauce. Refrigerate remaining enchilada sauce.

2. Cover and cook on low heat setting for 6 to 7 hours.

3. Pull chicken to shreds. Return chicken to cooker. Stir in green onions. Cover and cook on low heat setting for 15 minutes.

4. Heat remaining enchilada sauce. Serve chicken mixture in taco shells with lettuce, tomatoes, and warm enchilada sauce.

sounds good- I wish I can make it but we don't like taco shells. Confused I wonder how it would be in pita.

I get it with the Mexican food at the local grocery store. Some of the regular brands have a hechsher.

we don't like those either.

I guess if I skip the enchilada sauce and taco seasoning and make a salad dressing instead and add pickles, I can make it into a sort of chicken shwarma.

I bought them once to try them, the regular kind and the whole wheat kind. Neither of them went over very well. It's kind of like eating nothing but you gotta chew and chew and chew. Then the smell got to me, and that was that. What
We're not picky eaters, we'll eat almost anything. I even tried them again and again to make sure I didn't like them until it became final.
I do really wish I liked them. You can put almost anythiing in them for an easy lunch or supper.
We'll stick with pita though.

I get some dried chiles (New Mexico chiles or Guajillo chiles work well).
Also, when I find them, I get some dried "Chile de Arbol" chiles.

I use about 6 New Mexico or Guajillo chiles and 2-3 "de Arbol" chiles (they are spicy).

Put them in a pan with water and boil until their are soft.

Take off the stems and put the chiles in the blender with a little salt, a tiny dash of white vinegar, and a clove of garlic. Just blend it and voila, enchilada sauce.

No, this this is definitely a red sauce. I have seen some kosher enchilada sauce in cans, but my husband won't eat it, so I just make it. Its very cheap and easy to make.

there aren't very many choices and that might have a factor in GR liking them. If we could get hamotzi flour tortillas it might be a different story. I've only see one type and it's mezonos and it's okay but not a real flour tortilla.

Mexicans heat up the torillas before serving and wrap in a towel. I think that effects the taste

I really like mexican food. So I want to try this recipe. I have wondered where I can find enchilda sauce.

Whatever the reason is, if someone finds me a different tortilla/taco shell, I'll be willing to try it!

I don't really go for Mexican style foods anyway. I'll never forget the time a whole bunch of us went to a Mexican restaurant for dinner and we looked at the menu, then looked at each other, and everyone ordered a kids' meal of chicken fingers and fries. Smile

I don't know why you would need a tortilla maker rather than a frying pan but I started looking into it and I think the problem was also in finding kosher ingredients.

If a COMPANY can get Kosher ingredients, BasHinda, you can too. Read the label, there's nothing magic in a tortilla!

A tortilla maker makes very nice crepes, that's why I suggested it. (What do you think, I own stock in the tortilla maker company?)

A frying pan produces FRIED crepes. Do you really want to eat all that oil?
