I put cayenne pepper, garlic powder minced onion, and italian spuce on the chicken cutlet and put in the oven at 350 for 3 hours. Comes out moist and soft!

On one hand, I’m jealous of all the posters who prepare on meal and everyone eats the same thing.
On the other hand, I’m not working too hard when I offer different food choices and I choose to pick my battles. I don’t want supper time to be a battle.
Here’s what tonight looked like:

1) Duck sauce chicken and rice pilaf for dh
2) onion rings and chicken nuggets (from freezer) for one son
3) 2 kids had bagels and cream cheese
4) 1 child had a slice of frozen pizza
5) I had rice cakes, cheese, Greek yogurt and fruit

Tomorrow I will make meatballs and spaghetti. This will work for most family members. One son won’t touch it no matter what...he can have cereal and milk or something else easy to prepare. I’m on a diet ( but I normally love spaghetti and meatballs!)..

I'd love a recipe or instructions for kebabs, tacos, chili, and moussaka. I find myself making the same patties/meatloaf/meatballs with ground meat and I'm ready to try something different. We're not big on pasta, though.

So I made a big pot of vegi soup
I'm frying fish
A big salad
And a cabbage side dish for me from Miriam Pascal cookbook
What carb can I make for my kids we had potatoes yesterday

Taco tuesday! One kid asked for meat tacos but I am skeptical so I figure that we can always have the ground beef I defrosted tomorrow if he changes his mind and wants cheese after all. My kids are interesting like that lol.

No major recipe. Same way you would do cooked chicken. Sliced onions/garlic chicken bottoms, veg & spices. Sautee a little if you like. Add water & duck sauce, let cook. A half hour before done add in pasta wheels in water to cook. If put in beg, then wheels get very big. Everything gets a mild sweet taste from duck sauce.

Kebabs: Google kefta beef kebabs and find a recipe that appeals to you. I use onion, cumin, mint, parsley, scallions, salt and dash of cinnamon. Or use your favorite beef seasoning and form into logs then thread each on a skewer (no eggs or breadcrumbs).

Tacos: Use an Ortega Taco seasoning packet or make your own

Serve in hard shell tacos, or soft flour tortillas, or over salad with taco chips to scoop up.

Chili: Brown beef with diced onion, garlic and pepper. Add large can diced tomatoes, a few tbsp tomato paste, 2 tbsp brown sugar, 2 tsp each chili powder and cumin, a bit of paprika, cayenne, salt & pepper. Add a drained and rinsed can of kidney beans. Bring to a simmer and let it go uncovered for 25 minutes.
Serve in baked tortilla bowls and top with diced avocado.

Moussaka: Salt eggplant slices and allow to sweat for 20 minutes. Pat dry.
Brown meat, tomato sauce, seasoning.
Use half of eggplant to layer bottom of square pan. Add all meat. Top with remaining eggplant and press down firmly.
Make a parve bachamel sauce to pour on top. You can then add sliced tomatoes and sprinkle with breadcrumbs if you'd like.
Cover loosely and bake at 350 for 1 hour, then uncover for 10 minutes.
