Chicken cubes in ratatouille for me.
Hot dogs and fries for the kids (they had fruits and veggies as snacks all day) and leftover shnitzel and kugel for dh.

So I ended up making mommy3b2c chicken with crispy onions, mashed potaotes and veggy soup.

Kids didn't like any of it. So I ended up giving them a PBJ sandwich again.
They did eat a little of the soup and half of their chicken. So I can't complain. They usually want the same thing every day.

Me too! I got inspired by a post yesterday and did chicken over potatoes in the instant pot. YUM.

Here's my super simple recipe.

saute two onions in instant pot in a lot of oil.

Add 6-8 huge chunks of potato (Pressure cooking makes potatoes super soft so leave the chunks really big.

Add kosher salt, paprika, garlic powder, onion powder enough to coat the potatoes.

Add chicken thighs, more oil and spices to coat (I use a bit of honey and smoked paprika)

I need to set the instant pot to Poultry/High Pressure and do it twice (50 minutes).

Because I love cake and my husband loves chips and we aren't little kids that have to ask for anyone's opinion..
We eat a few healthy things and a few not healthy things every day and we're fine.

Ok woah thats way way too long! I make chicken and potatos in the IP, dark meat on the bone. Firstly, forget the preset buttons. They are all the same and just manufacturers suggestions. Dark meat on the bone is 19 mins manual, 15 mins npr, and then qpr. I pile in the chicken, add a sauce, then pile the potatos on top and season with spices. Add 1 cup water.

Lol! I have the same menu. Mommy3b2c, you are such an inspiration! Wink

I had to tweak little because I didn’t have apricot jam- I replaced with duck sauce. I also mixed the crispy onions with panko crumbs since I was running out of the onions. Looking forward to trying it.

It's not much of a recipe.

Wash off as many potatoes as you need. I don't bother peeling. Slice in french fry shape.

Place on sprayed cookie sheet. Spray the fries with cooking spray. Sprinkle salt and chili powder to taste.

Bake at 400 until crispy. Enjoy!

You clearly put in more effort than me Smile

I open a can of sliced potatoes, throw it in a dutch oven. Cut up an onion and throw that in next. toss in however many skinned chicken legs. Spice it all. Cover and stick in the oven for 2 hours. Done!

All leftovers including broccoli, chicken nuggets, green beans, wild rice...
I usually cook a lot sunday and again when I squeeze in the time in middle of the week and save the leftovers for another 2 days.
As I don't work Sunday.
Shabbos food I cook a months worth at a time of everything and freeze so all I need to make fresh is cholent and fish only if we have guest otherwise I don't bother with fish.
P.s. my dh does not come home for dinner.

I'm jealous of posters serving leftovers. My kids won't touch leftovers, even if they loved it the first time. I cook almost exact and dh eats the tiny bit of extra if I ever have any. What's your secret??
