this may not be the right forum so please move it where it belongs if necessary
we just went through an awkward situation and would like advice to be better ready for future
we hosted a guest and were totally not ready
I think this partially is their fault for not telling us that they have celiac disease but I digress
those of you with this disease in the family please share you Sabbos meals

I have celiac disease so salmon is fine as long as there is no bread crumbs. I don't wash unless I bring my own bread. Soup I keep the balls and noddles separate. Chicken and potato kugel and salad can easily be done without gluten as can compote. Now cholent I don't eat by me but Ive gone to my friends home and she took out some of her cholent into a separate pot before she added barley to the main pot.

Serve salmon made with fresh ingredients like garlic and salt.
Plain chicken soup broth.
Chicken or meat made with fresh ingredients, no breadcrumbs or cornflake crumbs (as even cornflake crumbs often have barley malt).
Potatoes or rice as side dish.
Basically no processes ingredients that haven't been checked (don't use bought condiments or sauces when cooking).
Don't serve them the challah that's at the table.

roasted sweet potatoes or potatoes, quiona or rice,
potato kugel or noodle kugel made with rice noodles
pad thai yum!
Broccoli or cauliflower or green beans or roasted peppers
chicken soup with veggies
chicken or meat
pareve ice cream, peanut butter balls, gluten free oatmeal cookies (the oatmeal needs to be specifically marked gluten free)

I have a gluten allergy. They definitely should had told you. Though I also think it is polite to ask guests before they come if they have any food issues.
This Shabbat we had guests, everything was gluten free,
Fish course
Sushi salad
Taco salad
Eggplant dip
Hummous
Lox
Main course
London broil
Chicken salad
Roast green beans
Sweet potato kugel
Cranberry crunch
Dessert
Cookies
Fruit
Ambrosia

It’s pretty strange that they didn’t tell you they have celiac. You can’t have been expected to accommodate that without knowing. If they did tell you, or in the future, it’s easy to make a mostly gluten free meal with menus like posters wrote above.

That's definitely on them that they didn't tell you in advance.
You've gotten some good menu suggestions already. A few GF items I really enjoy are quinoa tabouli, flourless cakes, sushi, and any kind of stir fry (see note below about condiments).
Keep in mind many popular condiments have gluten, such as soy and teriyaki sauces, though it is possible to find GF versions of these. Also watch out for potential cross-contamination. If, for example, you usually dip your knife into your mayonnaise jar while spreading it on bread for a sandwich, then you can not use the same mayo for a broccoli kugel.

yes the cross contamination is the hardest part
I think it almost sounds like if we have to do it again, we would all have to eat a completely GF menu
