I'm going iyh on vacation for a weekend and I was wondering if there is a halchic problem with going to the beach on shabbos...

Afaik, you may go to the beach but not in the water/swim.
Ask your Rav.

We walk on the beach on shabbos but like a poster said, it's always out of the eruv so you can't carry.

Not always. I believe certain bodies of water can be used as the edges of the “eiruv”. They are like natural walls. Definitely worth asking.
