I take ground turkey, add in salsa and make into hamburgers. They're awesome the salsa makes them very moist and juicy!

You can use it in any recipe that calls for ground beef- just add a bit more seasoning and a splash of olive oil, b/c ground turkey can be dry due to the low fat content.

Ground turkey with orzo, zucchini and fresh basil
1 T olive oil
1 medium onion, chopped
1 garlic clove, minced
1 1/2 lbs ground turkey
1 (16 oz) can Italian crushed tomatoes
2 medium zucchini, sliced
1/4 c chopped fresh basil
1/2 t salt
1/4 t pepper
1 c orzo
(The original recipe is for a wok, but it's really easy to simply use a pot or pan)
In a wok, heat olive oil over medium-high heat until hot, swirling to coat sides of pan. Add onion and garlic and cook, stirring until softened, about 3 minutes. Add ground turkey and cook, stirring, until meat loses its pink color, 5-7 minutes.
Add crushed tomatoes, zucchini, basil, salt and pepper and 1 cup water. Bring to a boil. Stir in orzo. Reduce heat ro medium-low, cover and cook until orzo is tender and most of the sauce is absorbed, 8-10 minutes.

stuffed mushroom.
Mix ground turkey with 1 egg, chopped scallion, 1-2tbsp matza meal, 1tsp soy sauce, salt & pepper and knead till well mixed. Use the mix to stuff mushroom. Place on baking paper and bake till cooked through.
