do you have any nuts in the house that you can grind up to use instead of bread crumbs?

great healthy and easy recipe. Take a jar of your favorite pasta sauce, dump on top of schnitzel, cover, bake for 45min-1h. Serve w/ pasta or rice.

Cut into pieces - either before or after grilling (can do it in a pan) and put over a salad!

Helani, that sounds intresting. Maybe I'll use tomatoe sauce instead?

Saute a diced onion, tomato and green pepper. When its soft, add chicken breast strips and season with paprika, garlic powder and salt. Saute together until the chicken is done (like 7 minutes)
Serve with white rice.
Enjoy!

You can use matzah meal instead.

I've been making honey mustard chicken wraps lately - recipe is in the What's for Dinner thread. If you don't have wraps, it also makes a great chicken sandwich.

then you have to add some spices, maybe some green peppers or mushrooms, or onions. The beauty of using pasta sauce is that it has all the seasonings and ingredients so you don't have to potchke.

Or if you have any challah leftovers from Shabbos you can make your own breadcrumbs in the food processor and add any spices you like.

I just made a really easy recipe - family all loved it

4 oz apricot jam
1/2 bottle Italian dressing
1/2 pkg onion soup mix

Combine, pour over chicken, bake uncovered for 30 - 40 min, until done.

Thanks everyone for all your ideas. I ended up using real corn flakes mashed up. I actuall dipped the schnitzel in egg first and then in the corn flake mixture (I added salt, a drop of sugar, garlic poweder and paperika). I also put some oil on the bottem of the pan (I know, not great for my diet Rolling Eyes but it tasted amazing!
