Carp Pike. Sometimes salmon
But it is way too much work... Just get the frozen loafs

My mother uses pike and white, because my father doesn't like carp.

I've made gefilte fish balls from ground salmon and from ground whitefish. Haven't done it in years though.

I use 2/3 whitefish, 1/3 pike; I like the consistency and flavor. Pike adds flavor, but I find it too assertive on its own. I don't use carp - too sweet for us.
