ISO hearts of palm OR corn salad

ISO hearts of palm or corn salad that doesn't include mayo or avocado.
Any recipes? Thanks!

Toss together sliced hearts of palm, corn niblets, diced tomato, diced red onion, sliced scallions, olive oil, salt and pepper.

Sounds like what I was looking for. Are the scallions a must? (I'm not such a fan of them.) and do you have exact measurements for the dressing?

Pomegranate, corn, cucumber salad

4 kirby, sliced
1 cup canned corn
1/4 cup pomegrante seeds
1 tbsp poppy seeds
3 tbsp rice vinegar
1 tbsp olive oil
1/4 tsp toasted sesame oil
1/2 teaspoon sugar
salt and pepper

This sounds interesting! I don't have rice vinegar or sesame oil... Think I can use regular vinegar and oil as substitutes?

No, scallions are not a must. You can use a bit of garlic powder instead.
I drizzle with oil then season with salt and pepper and keep tasting until it's just right.

I'm not sure. the sesame oil has such a distinct taste.
Maybe the rice vinegar you can sub with a different mild vinegar, like wine vinegar, but I'm not sure.

Corn, red pepper, Israeli pickles, red onion, cumin, olive oil, salt and pepper.

Corn, cherry tomatoes, pepper, fresh basil, red wine vinegar, garlic powder, salt, olive oil

I also make a corn salad based salad with diced veggies for color (red pepper, kirbies, red onion) The dressing has mustard in it.

I really don't measure but I would say just a pinch of salt because the pickles are already salty and maybe 1/2 tsp cumin and 1-2 olive oil and 1 tsp red wine vinegar
