I sometimes make fish balls, like meatballs, but out of canned salmon or tuna. Its good as an appetizer with horseradish.

First of all, in Israel my cousins makes her own gefilte fish using cans of tuna and salmon. I can try to get you the recipe if you PM me.
second of all, once in a while I make a salad that is made from tuna, kasha and hard boiled eggs. It's in cookbest - Best of the Heimishe. we really like it.
Some people serve egg salad, chopped liver, with some vegetables for 1st course/appetizer

you can steam whitefish, too. I personally don't find gef expensive, but I'd add more matza meal and carrots to stretch it, and cut the pieces smaller if I did.
there are cheaper brands, too. I think ungar's is the cheapest.....sometimes before yomtov there are sales, if you ask around, and you can get a case for a bargain.

I like the idea of fish patties ... also
defy - I'm coming for shabbos ... love the idea of meatballs and rice/orzo - I would have FUN!!!

s'ok..I cant see myself makign gefilte fish at home...a bit too over my head I think.

you don't hve to make tthe fish, just add the ingreidnets to a defrosted roll.

My family doesn't like fish, so we don't usually have gefilte. We eat salads & dips with the challah, sometimes I'll make something like pastrami in puff pastry or stuffed grape leaves. A few weeks ago we had a salad of arugala with canned tuna, balsalmic vinegar, red onions and chopped tomatoes, which was delicious. Not sure if these suggestions are any less $$ than gefilte fish, though. Is it cheaper if you make your own gefilte fish in a large batch and then freeze it?
