ISO great fish recipe for yom tov

I usually serve boiled baby salmon and occasionally sweet and sour, alongside gefilte. I was thinking of serving something else for change sometime over yom tov.
Please post your tried and true recipe!

I made a delicious spicy sol in tomato sauce for r"h that should work for any white fish fillet but I don't have an exact recipe.
cut into stripes:
an onion or two
some tomatoes
some bell peppers in all different colors
half a jalapeno (I put a whole one in and it was way way to spicy)

Fry the onion in a little bit of oil until brown add the rest of the veggies and fry until soft.
Add a small box of tomato paste and equal amount water. salt, a teaspoon or two of sugar and bring to a boil.
add the fish and spoon some of the sauce and veggies over them.
cook fifteen-twenty minutes.

Marinate salmon cubes in 4 tbsp. each of honey and mustard 2 tbsp. lemon juice and half a cup of olive oil. Bake uncovered for 20 minutes on 400, serve with lettuce. Delicious and a breeze to prepare.

Baked salmon easy and tasty-
Bake fillet salmon slices uncovered on 425° for 20 minutes. Take it out and spray with olive oil cooking spray, sprinkle salt, paprika, garlic powder and black pepper. Spray a little more olive oil. Return to oven for another 15 minutes uncovered.
I like it best warm but can be served either way. I usually warm it up on the blech.

Teriyaki salmon
(I make this with tilapia too for a change in foods and it's cheaper too, I use the frozen ones)
Thinly smear slices with mustard (I use fillet and skinless salmon)

Combine in a ziploc bag:
3/4 c teriyaki sauce
3/4 c soy sauce
1/2 c dark brown sugar

Marinate fish for 2 hours
Sear both sides in a little oil (about 2 min)
Transfer to a pan and bake on 350° for 20 minutes.

Very tasty

Canadian version of the recipe above: Marinate the salmon in equal parts of soy sauce and maple syrup. This is tried and true, and the go-to salmon recipe for most people I know. Bonus flavour if you can cook it on the BBQ grill or a ridged grill pan.

Do you have your fish seller cut the fish into cubes?
