About a year and a half ago (around Shavuos 2013, I think) Whisk had a recipe from Elky Friedman for a salad with canned beets, baby spinach (I think - or maybe romaine), sweet potato "croutons", and a dressing made with light sour cream. It was my favorite recipe for a while, but I somehow misplaced it and don't remember it! For anyone who saves all their old magazines / recipe sections... do you think you could find this one?
