What's your recipe for tomato glazed chicken? Sounds like something DH would love.
I tried the fresh and easy recipe
Baked Chicken With Tomato Brown Sugar Glaze.
1 chicken, cut into eighths
salt and black pepper
1 (8 oz.) can tomato sauce
7/8 cups sweet red wine
1/2 cup brown sugar, firmly packed
4 garlic cloves, minced
Place chicken skin-side down in a 9x13 pan; season with salt and black pepper. Whisk tomato sauce, wine, brown sugar and garlic in small bowl. Pour over chicken.
Bake covered in oven preheated to 350 for 1 hr. Uncover and continue baking under tender and no longer pink, about 30 minutes.
Sunday - shabbos leftovers (cornflake chicken, homemade corned beef, chulent, potato kugel, big salad - kind of a smorgasboard of leftovers)
Monday - deli omelette (I had a LOT of shabbos leftovers), some kids put the deli omelette in a whole wheat pita, and spinach potato soup, big salad
Tuesday - blueberry meatballs, salad, ww pasta
Wednesday - roast beef, mini potatoes, veggie soup, salad
Thursday - something milchigs - probably tuna melts and greek salad.
Looking it over, it's kind of an odd week.

It's a recipe from Leah Schapira and Victoria Dweck's Pesach cookbook. Basically, sweet and sour meatballs with blueberry jelly in the sauce. Sounds odd but actually tastes quite good. It is one of those things that makes everyone in my house happy.

If youre looking for a rice recipe with a different spin, try spinach rice (Susie fishbain). Saute onions, then spinach (she calls for marg. Ive successfully used palm shortening.) mix in cooked rice. Yum!
Ingredients: 2 lbs thin cut chicken cutlets (10-12 cutlets)
1/2 cup flour
1 onion cut in thin strips or rings
1 cup fresh sliced mushrooms or 1 can sliced mushrooms
2 T olive oil
2 T chicken soup mix
4 T brown sugar
1/2 cup water
1/3 cup Marsala cooking wine
Salt and pepper to taste
Directions:
Preheat oven to 350.
DIp cutlets in mixture of flour, salt and pepper.
Heat olive oil in pan and fry each cutlet a few minutes on each side, leaving the middle a bit pink.
Remove cutlets; place in roasting pan.
Sautee onion until translucent and beginning to brown at edges.
Add mushrooms, sautee a few more minutes.
Add chicken soup mix, brown sugar, water, Marsala cooking wine, to pan. Season with salt and pepper. Let cook a few more minutes.
Pour wine and mushroom sauce over the chicken in the roasting pan. Bake at 350 for 20 minutes. Serve alone or over rice.

so I would love to know how many of you actually manage to make all the stuff on your menu plan each week. I always find that by the time I get to wednesday, I forget to defrost something, or change my mind about something else. .... My kids still want to know where the meatballs are - they were looking forward to it because I didnt make meatballs for ages, and then I just forgot to deferost my ground meat!
