What kind of dressing are you looking for? Is splenda ok?
My easiest go to recipe works as caesar dressing or for brocolli salad it's equal parts mayo, vinegar or lemon juice and splenda.

do you want sweet ones? what sweetener do you want to use instead of sugar - honey, artificial sweetener, etc.? or it doesn't have to be sweet, just sugar-free?

mayonnaise, vinegar, black pepper, a little salt
oil, vinegar, salt, pepper, garlic powder
mayo and salsa
mayo, salt, pepper, garlic powder, basil, oregano, a drop of oil (I usually add a drop of sugar also but you can skip it)

You always have vinegar & oil (balsamic vinegar and virgin olive oil are my preference), or lemon juice & oil. Add salt and pepper.
To elaborate, add a teasp or so of Dijon/grainy mustard. Or chopped dill. Or paprika. Or pesto.
Another one is oriental dressing: equal part soy sauce, rice vinegar and olive oil.
If you want milder, substitute half of rice vinegar with fresh squeezed orange juice.
A bit more elaborate ones: sautee 1/2 finely grated carrots with 2tbsp olive oil, sprinkle salt, and cook 5min till carrots are cooked (turns from orange to yellow). Add 1teasp or two freshly grated ginger. Add vinegar (about 3tbsp, substitute partially with orange juice) and oil (about 2tbsp). It adds lovely colour and if quite refreshing.
You also have golden goddess dressing, vinaigrette with mashed avocado.

Take any "older" cookbook and most sauces won't have sugar in it.
