I once diced up some onions really small and sauteed them until almost caramelized with the intention of adding them to something else, but forgot. So in the end, I added some salt and pepper (there was enough oil from the frying, and served it as a dip. It WENT!

I saw this on a blog somewhere. Sauté onion with salt, pepper and paprika. Blend with some mayo. I make it all the time and people love it.
