OMG!! I can't believe what I just did. I transferred the salmon out of the pot and into the pan to refrigerate it. I transferred the fish, onions, and the garnet bag with all of the spices. Then I FLUSHED the pot of extra sauce, but I forgot to put some into the pan to cover the fish!
This is supposed to be marinated fish (sweet & sour)! There is about an inch of liquid in the pan but I always cover the fish with liquid to keep it from drying out and for the flavors to go into the fish. Is it going to taste horrible? Should I throw everything out and cook more tomorrow?
Ahhh! I still can't believe I just did that! I went to nurse the baby and fell asleep before finishing in the kitchen. Now I'm all drowsy trying to finish things up. Bad idea!!

Dont throw it out. Cover it tightly with plastic and it will be fine, just missing sauce but certainly edible.
What's your sauce recipe?

You can make this sauce and pour it over the fish-
equal amounts of vinegar, white sugar, ketchup, water and mayo. Whisk.

Brings back memories of the time I made a very rich vegetable stock. After many hours of simmering to extract every last bit of flavor from the veggies, I strained the broth ...right down the drain. What could I do but laugh?

I ended up adding some water to the little bit of sauce to almost cover the fish. I didnt want it to dry out. I really hope it's going to taste ok. Maybe I should have just made a new sauce like someone suggested, but I didnt really have time...
Thanks for your help!
