what type of fish do you use? A lot of the recipes for homemade gefilte fish in Spice and Spirit cookbook call for carp, whitefish, and pike. I was at the fish store today, discussing it with the guy there. This is what he had to say:
1) Whitefish is great for gefilte fish
2)Pike is not so great because it's pricier and there is a lot of "waste." Meaning, if you need 1.5 lbs of pike for your recipe, you will have to buy (and pay for) a much bigger fish just to get 1.5 lbs of ground pike
3)Carp is good, but it only comes to my city one day a week
He also recommended trout and a fish called buffalo, which I had never heard of before. What do you use?

the fish market I go to does not sell white fish, so I get carp, and equal amount or more of sheephead, buffalo, and sometimes red snapper. The only time I make gefilte fish is on pesach, my family really likes it.

Nile perch is not available where I live. I used to make gefilte fish w/ it when we lived in e"y.

White fish is the best fish - I find other fish a little too fishy - I used to make gefilte fish 2x a year - now I guess I don't. Maybe I'll make some.
