Heh, heh I saw this comment and I also wondered what ra-mom's recipe was. I didn't read further down the thread.
My recipe is really nothing at all exciting, it's just a way to get some vegetables into my kid. I either use jarred marinara sauce or plain tomato sauce with Italian spices and I shred a zucchini into it. The zucchini gets very integrated into the sauce, so you can't really see it. I also finely shred some zucchini into the meatballs and that way even the kids who don't want sauce - or the kids who won't touch meatballs but will take sauce - get vegetables.

Last night we went out
Tonight- tamale pie in the crockpot
Tomorrow- sweet and sour chicken, eggplant and brown rice
Wed and Thursday are up in the air.

tues-dark meat chicken skewers, quinoa, roasted cauliflower
wed- out to eat?
thurs- turkey chops, quinoa, eggplant in tomato sauce

Sorry to disappoint you, but there isn't much of a recipe here. A broiled/grilled portabella mushroom is the burger. As for the corn salad, I don't have an exact recipe either. I cook a few ears of corn, then cut the kernels off the cobs and add tomatoes, basil, and a bit of diced red onion. I dress it with extra virgin olive oil, juice of 1/2 lemon/lime, salt and pepper.

Sunday - french fries and rice topped with white beans in tomato sauce. I forgot to defrost the chicken
Monday - shnitzel, macaroni with marinara sauce, and Israeli salad
Tuesday - tomato mushroom soup with soup croutons and bread, maybe also an Israeli salad
Wednesday - shnitzel, macaroni with marinara sauce or french fries, and Israeli salad
Thursday - still need to figure it out... probably more shnitzel. I bought a lot of white meat
Not the most exciting menu for this week, but shnitzel is so tasty!

I'm hoping that by posting here I'll actually stick to the menu!
Sun - Giant Fussili Pasta with low fat creamy tomato mushroom sauce
Mon - Ground beef in tomato sauce with wholewheat spaghetti
Tues - Leftover ground beef with rice, frozen mized veg
Wed - Poached eggs on toast, lettuce salad (we're going out after dinner so don't have much time)
Thurs - Fried fish in batter, home-made baked french fries or mashed potatoes, peas
