I've already cooked my salmon fillet, and I'd love to make puff pastry squares, or some kind of salmon starter. Any ideas?

Saute onion and garlic, add spinach and salt and pepper. Put a spoon of spinach then a square of salmon and wrap and bake.

There's a recipe on kosherstreet.com.
It might be dry if you already cooked the salmon, but so would any recipe that you need to bake salmon that's already cooked.
It might be worth a try.

I think the salmon will be dry if it gets baked again
maybe just bake a square of puff pastry and serve the salmon on top with some kind of sauce (pesto, honey mustard) or something
or do salmon on a bed of some kind of salad or pasta and skip the puff pastry
