anyone got a min. to give me the challah pinapple kugel from kbd entertained? thanx

1 lg. challah
1 c. sugar
1 c. marg
7 lg. eggs
1 (20 oz can) crushed pineapple, drained
1/4 c. soy milk/non dairy creamer
1 tsp vanilla
1 tsp cinnamon
1 tbsp sugar
preheat oven to 425.
cut most of crust off challah and discard. cut challah into cubes. set aside.
in bowl of mixer, at med speed, cream sugar and mar. Add eggs and mix.
Add in pineapple, soymilk and vanilla. Mix to combine; batter will not be smooth.
add the challah cubes and toss the mixture with a spoon until all combined.
pour into a pretty oven-to-table baking dish.
In small bowl, mix cinnamon and sugar. Sprinkle top with mixture.
bake uncovered for 40 min. top will be golden brown.

I love that kugel! I had it for the first time a few weeks ago and it was sooooo good. The apple kugel recipe from that cookbook is delicious as well.
