Just made this last night and it was great, fast and easy!
Best thing was it used up the extra rice left over from Shabbos
Stir fry onions
add: green pepper and celery= both diced up very small.
Stir fry until they are done.
Beat 2 eggs in a glass, and then pour into pan, while flame is still on.
Using a spatula, keep mixing constantly until the eggs have completely dried up.
Bec. you are constantly mixing the pan, the egg pieces will end up being small, just as when ordering chinese rice at the resturant.
When eggs are completely dried, tour off flame. Add your rice.
Add 2 T of soy sauce, and salt (and pepper) to taste.

I learned this from my mother: cook the rice in the microwave! In a big glass bowl, add the following ingredients:
1 cup rice,
2 cups water,
3 Tablespoons soy sauce,
2 tablespoons onion soup mix,
1 teaspoon garlic powder and
2 tablespoons oil.
Microwave on high for 23 minutes or whatever it says on the packaging. In the meantime, chop up a small onion or less, and put it in the oven on 500 for about 5 minutes until translucent (I put it on a piece of silver paper). When it’s done, mix it in to the finished rice. This is delicious.

But then you have to baby-sit it and make sure it comes out just right. The microwave method is fool proof.

But it takes minutes the way I do it. I wanna try the one mentioned above since my DH loves rice.
