I just checked out that site, Thanks, it's really helpful! I found my answer for chumus, but couldn't find anything about dips. Does anyone know?

I don't know if this is correct or not, but I kind of do it based on the ingredients. If I make a dip out of mayo, ketchup, and spices, I figure the mayo and ketchup last indefinitely in the fridge and the spices last indefinitely on my shelf so why worry. But that's only if I haven't dipped veggies straight in because then the veggie juices mix in and spoil. I take off a spoonful into a separate dish for dipping and then the dip container lasts until it's finished.
