Sunday--french fries and sausages
Monday-- fish balls, mashed potatoes, zuchinni in tomato sauce
Tuesday-- kids: fried meatballs and leftover mashed potatoes. DH and me: ketchup- mayo flavored chicken and rice with mushrooms
Wednesday: one pot chicken salad
Thursday: shabbes food

Veggie burgers are purchased.
Sweet potatoes are just as they sound: cut up and tossed with oil, salt and pepper and then roasted on a sheet pan. The only thing I do differently is to use a tip I got from Cook's Illustated a while back. I start baking the sweet potatoes covered at 300 for about twenty five minutes before I remove the foil and turn up the heat until they are cooked through. This ensures the sweet potatoes are moist and sweet inside.

The crustless tuna quiche was one I took from this site, minus the crust. I used real milk and added half a package of shredded cheddar cheese. The original recipe was dairy free. I think it may have been the one posted by Chocolate Moose. It turned out very nicely.

Zucchini-Rice Soup with Basil and Parmsan, adapted from The Flexitarian Table by Peter Berley.

ingredients:
1/4 cup evoo
1 large onion
1 1/2 lbs. zucchini (or half zucchini, half summer squash) diced into half inch cubes
6-8 thinly sliced cloves of garlic (I just used a garlic press)
4 cups water
1/3 cup basmati rice
1/2 cup basil leaves, chiffonaded
1/3 cup freshly grated parmesan plus additional for serving
Freshly ground black pepper

Method:
Heat two tablespoons of the oil in a 5 quart Dutch oven. Add the onion and a teaspoon of salt and sautee for five minutes. Then add the zucchini and garlic an cook until starting to soften, about two minutes. Next, add the water and bring to a boil. Add the rice and basil and cover the pot. Simmer until the rice is done, approximately 30 minutes. Stir in the cheese and the rest of the olive oil. Add salt and pepper to taste. Serve the soup warm (not hot) or room temp garnished with extra sliced basil leaves and additional parmesan passed at the table.

Notes:
I happened to have pareve pesto, so I just swirled some in before serving and omitted the basil in this recipe.

If you prefer a pareve soup, just use a bit of extra salt instead of the parmesan.

Sunday night we had pulled chicken sandwitches with sautéed corn and zucchini

Last night was pasta with pesto

Tonight we are having tilapia with green beans

Tomorrow- individual quiches not sure about a side dish

Sunday--had a family BBQ
Monday--chicken fajitas (in pita)
Tuesday--grilled salmon with white wine cream sauce (from Ami) for me and DH, plainer salmon for DSs
Wednesday--DH and I go out for a burger
Thursday--pita pizza pockets for DSs, potluck for me!

Tuesday night -- shabbos cereal (kids), hamburgers (takeout for adults) w/ slurpees
Weds night -- bagels and lox
Tonight -- who knows? We finally have power, but no clue how well my food stayed.

Sunday: baguette and lox for dh and me, kids had variously: farina, cereal and milk, baguette and lox spread, plain baguette. Some had more than one of the above.
Monday: spaghetti and meatballs in tomato-zucchini sauce
Tuesday: tuna patties, spinach, corn on the cob
Wednesday: cream of zucchini soup, roast chicken with potatoes and carrots
Thursday: TBA
